Tea Houses in Azerbaijan and How They Work

Tea in Azerbaijan is not a beverage category. It is the container for most social life, and understanding that changes how a visitor uses the country.

People do not go for a coffee here in the way they might elsewhere. They go for tea, and they stay.

The glass

Tea arrives in an armudu, a small pear-shaped glass. The shape is functional: the narrow waist keeps the top from cooling too fast while the bottom holds the heat.

It is small on purpose. You will have several, and the refilling is part of the ritual rather than an upsell.

What comes with it

Jam is the classic accompaniment, often several kinds, sometimes made from things you would not expect to see in a jar. Cherry, fig, walnut, white cherry.

The local habit is not to stir sugar in. A lump is held in the mouth, or jam is taken on a spoon, and the tea is drunk through it. Try it once before deciding it sounds odd.

Nuts, dried fruit and small sweets also appear. Whether they are included or charged separately varies, so ask if you are unsure.

The tea house

A chaykhana is a place designed for staying. Long tables, low noise, backgammon or dominoes, and no expectation that you will finish and leave.

In Baku they range from ornate rooms in the Old City to plain places on ordinary streets. The plain ones are usually better and always cheaper.

Outside the capital, tea houses are often the centre of a town’s social life. They are also, in some places, still largely male spaces. You will see that immediately from the door, and it is a signal to read rather than a rule anyone will state.

How to use one as a visitor

Sit down and order chay. That is the entire process.

Do not rush. The value of the place is that time behaves differently inside it, and thirty minutes is the minimum for the transaction to make sense.

If you want herbs in it, say so. Thyme is common, and so are other additions depending on the season.

Where tea sits in a day

After a meal, always. In the middle of an afternoon, commonly. As the reason for meeting someone, constantly.

If a driver or a guide suggests stopping for tea, say yes. It is not a delay in the itinerary, it is the part of the day you will remember.

Buying tea to take home

Markets sell loose tea, herbs and the sweets that go with them. It travels well and it is light, which makes it one of the better things to carry back.

Buy jam if you have the luggage allowance. It is heavy and it is worth it.

A small piece of etiquette

Let the host pour. If tea is being served to a group, someone will take that role, and taking it from them is a small awkwardness rather than an offence.

If your glass is refilled and you have had enough, leave it full. An empty glass is an invitation.

Arranging it

Nothing here needs arranging. It is the one part of a trip to Azerbaijan that costs almost nothing and asks nothing of you except that you sit down.
